Assessment of the effect of pre-slaughter fasting period of young bulls on the qualitative characteristics of meat

It has been established that form during 24 hours after affected indicators longissimus dorsi muscle, namely, there increased: dry matter content by 2.45 protein 2.64 glycogen concentration 38.9 moisture capacity 11.01 oleic fatty acid 2.65 % decrease 2.48 pH 3.5 myristic 0.95 palmitoleic 0.42 stearic 1.35 compared group period. Thus, pre-slaughter improves animals slaughtered it.
